June 20th marks the summer solstice, and nothing says summer more than a scoop of frosty ice cream. And what makes ice cream even better? Cookies, of course. Whether sandwiched, crumbled, or swirled in, cookies take your ice cream game to the next level! Here are our top five cookie and ice cream combo recipes to help celebrate the start of summer.
Ice cream sandwiches
Ice cream sandwiches are the perfect summer dessert—they come together quickly and can be made ahead of time. Grab a pint of your favorite ice cream and let thaw until slightly softened. Place a large scoop between two cookies (David’s Fresh Baked Peanut Butter Cookies or Fresh Baked Candy Cookies work great for this) and press together gently. Roll the sides in sprinkles, nuts, or crushed pretzels for added flair!
Cookies & cream milkshake
You can’t go wrong with a classic cookies & cream milkshake! In a blender, combine two scoops of vanilla ice cream (dairy-free ice cream also works!), a bit of milk, and crushed chocolate cookies, such as chocolate wafers or David’s Fresh Baked Double Chocolate Chip Cookies. Blend until only tiny pieces of cookie remain. Pour into chilled glasses and top with whipped cream and more crushed cookies. Yum!
Ice cream cookie parfaits
For a fun and low-mess dessert to make with the kids, give ice cream cookie parfaits a try! In a small glass or mason jar, layer together crumbled cookies, ice cream, and any other toppings your heart desires—think: chocolate fudge, whipped cream, fruit, nuts. Repeat two to three times. Eat immediately or freeze until you’re ready to indulge!
Pro-tip: David’s Butter Pecan Meltaways make the perfect crumbly cookie for an ice cream parfait. Blitz cookies in a food processor or crumble by hand using a rolling pin.
Cookie ice cream pie
If you’re looking to impress guests at your next summer gathering, look no further than a cookie ice cream pie. Mix 1.5 - 2 cups of crushed chocolate wafers with a few tablespoons of melted butter. Press into a pie pan and freeze for fifteen minutes. Remove and fill with your favourite softened ice cream (for example, mint chocolate chip or chocolate peanut butter). Top with a layer of whipped cream and/or fudge and freeze until firm (at least two hours). Your guests will be coming back for seconds!
Cookie skillet à la mode
Sometimes, it’s best to go back to basics. On days when you’re craving a sweet treat without the work, nothing beats a scoop of ice cream over a warm cookie. For an easy cookie skillet, defrost a few rounds of David’s Cookie Dough and press together into the bottom of a small or medium-sized oven-safe skillet. Bake and serve fresh out of the oven with a scoop of your favorite ice cream. Oh la la!
