5 Fun Ways to Use Cookies for Easter Treats & DIY Desserts

Spring has officially sprung, and with Easter just around the corner, it's the perfect excuse to get cracking on some festive treats. Whether you're looking for a sweet baking project with the kids or a DIY dessert to impress your guests at brunch, Easter cookies are a classic for a reason. Here are five easy ways to transform cookies into adorable Easter treats.

Bunny face cookies

Nothing says Easter more than bunnies! For a DIY Easter dessert that’s fun for kids and adults alike, you can’t go wrong with decorated cookies.

Chocolate wafer cake 

For a nostalgic (and delicious) Easter dessert, a classic chocolate wafer icebox cake is the way to go! All you need for this recipe is a pack of chocolate wafer cookies and whipping cream. 

Whip the cream until stiff peaks form. Spread a dollop of cream on each cookie and then press together to make a few 3-inch stacks. On a platter, spread a layer of whipped cream and lay the cookie stack sideways on top, forming a log shape. Frost with the remaining whipped cream. Decorate with chocolate mini eggs or jelly beans for an extra-festive touch! Let chill for at least 8 hours, until the wafers soften into a cake-like texture. 

Cookie sandwiches

Cookie sandwiches are a crowd-pleaser and come together in a jiffy. Place a scoop of pastel-coloured frosting or ice cream (mint chocolate chip or cotton candy, for example) between two cookies of your choosing and gently press together.
